The vehicle manufacturer recommends 37 lbs of pressure in my tires but my tire manufacturer says 50 lbs is max. Should I be adjusting my tire pressure when towing?

When towing I always inflate to max as listed on the tires sidewall.

Chances are the max pressure is for max allowable load. Is the load on your tires really that heavy?
Just as an example, my '06 Jeep Rubicon came from the factory with Load Range E tires on it. Jeep says inflate to 33 PSI for normal road use. The tire sidewall says to inflate to 80 PSI to carry the maximum load.
Since there is no way I can ever put enough stuff in the Jeep to get to the maximum load for the tires, I follow the instructions given by Jeep.
To directly answer your question about adjusting tire pressures when towing, all I can give is a definite MAYBE!
Adjust the pressure according to load. You want the tread flat on the road, not bulging in the middle or riding on the edges. Use the pressure that will give you the flat tread.

Really depends on how much load tires are having to carry........
50# sounds like MAX PSI for MAX LOAD capability
37# sounds like 'normal' running around tire pressure
How much weight on tires when towing? Trip to scales will tell you (Jeep & trailer)...with that info you can see what tire mfg. load chart(s) indicate.

At least run your rear tires at the 50 psi max pressure when towing. Won't hurt to run the fronts at 50 psi too, but 40-45 is likely enough.

My rig handles best when I run 80lbs in the rear and 75 in the front. (load range E tires-80lb max)

Weigh the vehicle. Calculate the load on each tire. Look up the tire manufacturers load inflation table. Inflate accordingly.

Towing I use the doorpost inflation guide, 60 front 80 rear as I'm fairly close to, but not over GVWR, not towing it's 50 front and 40 rear, a much better ride and still within weight guides.
