I have made the decision to get healthier, and lose a few pounds. I know all the right things to do, but breakfast has always been my downfall. I'm not overly fond of eggs. I don't have a cholesterol problem, so I CAN eat them, just don't care for them. Any ideas to make them taste better would be greatly appreciated since they are a great source of protein.
I would like mostly lower carb ideas, as that IS my biggest
temptation. Also, quick would be helpful for the mornings I need to go to work.

Here is an idea from LA Weight Loss:
Nothing much faster than grab and go with cookie in hand!
Big Breakfast Cookies
1/2 c raisins
1/4 c RF Peanut Butter (best with crunchy)
1/2 c + 2T + 2t non fat dry milk
1T + 1t Baking powder
¼ c. + 2T. Brown Sugar (splenda)
3/4 c dry oatmeal
1/2 c water
Preparation: Combine all ingredients and scoop into 4 equal portions onto a cookie sheet that has been coated with nonfat cooking spray. Bake in 350 degree oven for 10 minutes.
Makes 4 servings. 1 cookie per serving
Each cookie is 1 fruit, 1 starch, 1 dairy, 1 fat.
Both retired. Travel with Nicky the Schnoodle. Son graduated and is teaching high school math. We notice he still prefers to use our checkbook! We still love our 2006 34' Allegro Bay XB and have 25,000+ miles on her.

DW is diabetic and I am pre-diabetic so we have to watch our carbs. We decided to get serious about it also.
When we go to IHOP, I always order Migas. And now I make it at home. It is scrambled eggs with sauteed onions, tortilla chips, cheese, jalepenos (I use only a little of the mild ones) and diced tomatoes all rolled together then served with some warm tortillas (corn or flour) and picante sauce. Mmmmmmmmmm. Good.
Occasionally we will have bacon, egg, lettuce, and tomato sandwich on whole grain double fiber bread.
Also carb smart is blueberry pancakes with sugar free maple syrup. Check the pancake mix label for carb count. Some better than others.
Some mornings, just bisquits and gravy for variety (but I love those also).
And of course, some mornings we just have carb smart cereal (hot or cold), fruit, and maybe yogurt.
All the above with some milk and/or orange juice (watch the orange juice though for carbs).
We walk pretty vigorously 30 minutes at least 4 mornings each week. Our blood sugar counts are down near normal and our cholestrol is down well into the good ranges. We were on meds to keep the blood sugar count down, but have now managed to get off those.

We eat lots of oatmeal - not instant. Instant has too much salt. I add walnuts, banana, and just a bit of brown sugar. Serve it with a 1/2 piece of whole wheat toast. Especially good on a cold winter morning!
To make eggs more flavorful, I will saute chopped onion, peppers, veggies (whatever I have on hand), then pour eggs over. Sort of like an omelet. You can also make a "breakfast burrito" by wrapping the eggs in a tortilla.

BB TX - How would those Migas be if I made a big batch on Sunday and heated during the week? Cold Cereal and Yogurt get pretty boring pretty quick. Like I said, I can eat the eggs if the taste is disguised and this sounds like just the ticket!

We do oatmeal when the kids are around but add 1 scoop of vanilla ice cream it provides the cream and the kids love it!!!! rvtommy

I used to make "pigs in a blanket" with an egg wrapper around a sausage with cheese. It's high in cholesterol, but also high in protein. Take 2 eggs and mix with it 1 tsp flour and 1 TBL water. Mix well. Heat a small 6" skillet and spray with PAM. Pour a small amount (1-2 tsp) of the egg mixture and turn the pan to coat it. When it begins to dry out on top, carefully raise the edges and flip. Allow to sit a couple seconds, then remove from pan. Place on paper towel to cool. Finish preparing the egg pancakes, placing a paper towel between them. Place a sausage link and some cheese in the middle and roll like a burrito. Place in a plastic baggie and keep in refrigerator for several days. In the morning, remove 1 or 2 and zap in microwave for 30 seconds to warm. Eat on the go.

Go to Bisquick's recipe site and search for Impossibly Easy Pie. There's a whole list of different recipes that don't taste especially 'eggy', and there's a wide variety of entrees and desserts. A lot of the recipes are easy to vary to your own taste by adding extra ingredients.
I've started making 1/2 batches of these recipes in a six-inch pan or Dutch oven. That makes three servings.
Nutritional info is listed with each recipe.
You can buy pickled jalapenos that have been 'de-heated'. You get the flavor of the peppers but not the heat. They're great add-ins for lots of recipes including stuff like breakfast burritos.
There's no law that says you have to eat only certain foods at breakfast time. If you wanted to, you could make a big batch of vegetable soup and reheat that for breakfast. Soup is a good, hot meal to start the day with, is flexible with infinite possibilities for ingredients and spices, can easily be made low-carb, can often be frozen in individual portions for a quick meal later on, and also helps provide more fluid in the diet. It would keep well for several days in the fridge, too.
