Even though I am from Council Bluffs I can't off hand tell you where to stop on I 29. The book The Next Exit or something like that has all of the exits with the sights. Check at your library or book store.

Depending on how far North???
We'd highly recommend the Redlin Art Center; it's the museum for Terry Redlin's art ... from the web site ... "The Redlin Art Center is conveniently located directly off the I- 29 and U.S.Highway 212 interchange, just east of Watertown, South Dakota."
It was really nice. Adults and kids in our party all enjoyed it.
The web site is: http://www.redlinart.com/ (sorry, no idea how to do a clicky)

If you get to the Sioux Falls area the Falls Park is a nice site to see at night with their laser show. Not far of 29 in Yankton, SD is a beautiful lake area that we spend most of our weekends at.

Redlin Center is a must if you get that far North.

Used to be a nice museum / wildlife viewing place around DeSoto Bend. Someone salvaged an old paddle-wheeled steam boat / riverboat. At one time it was an awesome place to see both history and migrating waterfowl. Been close to 20 years since I was there, but it was really nice..

If your interested in riverboats and artifacts get off I-29 at Iowa exit 70 and go about 5 1/2 miles to the west to the DeSota National Wildlife Refuge (DNWR). Here, they salvaged the Steamboat Bertrand that hit a snag and sank in 1865. The salvaged cargo and what is left of the steamboat is on display at the DNWR. I found it very interesting. To learn more about this go to this site.

If you get to the geographical center of North America in Rugby N.Dak be sure to check out there antique museum about half a mile east on route 2 or continue north to the international peace gardens at Turtle Mountain Provincial Park,as the park is on both sides of the border and there is only one entrance between the Canada and US border you dont have to cross into Canada to visit the entire park.

If you have an interest in history, especially the Lewis and Clark Expedition, here are a couple of stops.

The Sergeant Floyd Monument in Sioux City, Iowa, honors the only member of the Lewis and Clark Expidition who died. SERGEANT FLOYD MONUMENT

North of Vermillion, SD, is Spirit Mound.

Travel it twice a year from Council Bluffs to Fargo, so far nothing of interest to us.
Not saying it isn't there. You'll have to get a pretty good ways off I-29 to find it.
